ALL-AMERICAN FEAST
The timing of Memorial Day in upstate New York growing season is wonderful as it coincides with our farmers harvesting the first of summer's early bounty. What could be a better way to honor Memorial Day than to put forth an All-American Feast full of fresh, locally grown, tantalizing great food? Below are just some of the recipes that will be found at many of your favorite Saratoga farmers' family gatherings this weekend --with the primary ingredients all available freshly picked/made, this Saturday at the Saratoga Farmers' Market, 9a-1p, at the High Rock Pavilions, High Rock Ave.)
French bread appetizers (from Rick Green's Ballston Lake Apiary table)
Cut baguette bread into one inch slices on the oblique, coat with butter on both sides and toast on a pan or grill; layer with mild cheese, grate pepper all over and put under the broiler or top shelf of grill until cheese melts; finally put streams of honey over the melted cheese and serve.
Tossed Salad with Strawberries (from the market shed family table)
mixed greens (and or romaine lettuce)
fresh spinach
Minglewood Sprouts (I like their nutty tasting ones)
Scallions, chopped
1 tbsp Ballston Lake Apiary Blueberry Honey
1/4 cup Saratoga Balsamic and Honey Concentrate
1 cup vegetable oil
1 tsp. Dijon mustard
1 tbsp. brown sugar
feta cheese, crumbled
1 pint strawberries, cleaned and quartered
1. In a large salad bowl, lightly toss greens, spinach, sprouts and scallions together (rip salad greens and spinach into bite size pieces if needed).
2. In a sauce pan, whisk together honey, balsamic concentrate, oil, mustard and brown sugar. Heat over low heat until brown sugar dissolves. Allow to cool (unless salad is going to be eaten immediately, in which case cooling is not necessary). Whisk once more and pour over greens.
3. Add strawberries and feta cheese and toss, serve.
Whole Spiced Chicken (from the market-vendor grillers)
1/2 cup salt or 1 cup kosher salt
1 chicken (approx 4 pounds)
Pure red chile powder (at least 1 tbsp)
1 tsp cinnamon (optional)
2 tbsp. Worcestershire Sauce
The night before:Mix salt into 1 gallon of water in a large stock pot or bowl. Add the chicken breast-side down and let sit in refrigerator over night.
Remove chicken from brineand pat dry. Sprinkle the chicken all over with Chile powder (mixed with cinnamon, if using). Gently pour Worcestershire sauce over chicken, spreading the moist rub all over skin with hand.
Grill whole chicken with breast-side up over medium-high indirect heat. Cover the grill and vent only slightly. Cook for 70 minutes or until internal temperature reaches 170 degrees and internal juices run clear. Baste every fifteen minutes with a little more Worcestershire sauce during cooking. Let stand 8 minutes until carving.
Potato Packets with Asparagus (M&A Farm family table)
We take thin skinned potatoes, slice very thin, onion (or scallions) also sliced thin. Take asparagus, snap the ends off, cut in half, add to potatoes and onion. Salt & pepper, pat of butter and wrap in foil, well sealed. We start these about ten minutes before meat is done, everything ready in about 30 minutes. (Editors note: add a bit of plain yogurt on top when eating...yummy).
Strawberries ala mode/gelato/Greek yogurt (market favorite)
Nothing is more appealing at the end of a great feast than fresh local strawberries. In the case of our market vendors, what you put with the strawberries is up to you! A few of the favorites are:
Strawberries and Battenkill Creamery Ice cream or Cream (whipped or natural) with Effie's Shortcake biscuits
Strawberries and Argyle Cheese Factory Gelato
Strawberries and Argyle Cheese Factor Greek Maple Yogurt (editor's note: add a sprinkle of brown sugar and dash of Quantro (liqueur) to the yogurt and its really, really special :)
For a beverage with this feast I would suggest Colebrook Winery's award winning Cranberry Chardonnay. For the non-alcohol drinkers in the family, cold Battenkill Creamery Milk (I know my husband will be happily guzzling their Chocolate variety!)
