Paired with Pascal Jolivet “Attitude” Sauvignon Blanc, LoireValley, FR Second Course cabillaud cuit avec artichauts barigoule fresh cod presented with minced carrots, shallots and chopped artichokes luxuriously simmered in a cured ham stock veloute. Paired with Hugel Pinot Gris Classic, Alsace, FR Third Course ratatatouille eggplant, zucchini, yellow squash and tomatoes roasted in olive oil garlic and minced herbs. Paired with Hecht & Bannier Rose, Languedoc-Roussillon, FR Entree boeuf a la bourguignonne choice beef braised in a red wine veal stock with baby bella mushrooms, pearl onions, carrots and fresh thyme; presented with mashed potatoes and grilled asparagus spears.
